Big vegan muffins, absolutely delicious and fluffy, with blueberries, chocolate, and oats 😍🌱 They’re lightly sweetened with just maple syrup and chocolate, and I make them with either kamut flour or regular all-purpose flour!

  • -soy milk 190 (mL)
  • -maple syrup 4 (tbsp)
  • -apple cider vinegar 2 (tbsp)
  • -neutral oil 2 (tbsp)
  • -all-purpose flour 300 (g)
  • -baking powder 1 (tsp)
  • -baking soda 0.5 (tsp)
  • -frozen blueberries 120 (g)
  • -dark chocolate 100 (g)
  • -quick oats 30 (g)

  • Preheat the oven to 195°C (380°F).
  • In a mixing bowl, mash the bananas with a fork until they form a slightly liquid paste. Add the soy milk, maple syrup, oil, and vinegar. Mix well.
  • Next, add the flour, baking powder, and baking soda. Mix again, just enough to incorporate the flour.
  • Add the toppings: chocolate, blueberries, and oats. You can set a bit aside to decorate the tops of your muffins. Mix one last time.
  • Pour the batter into 6 greased muffin molds and decorate with a bit of the reserved toppings. Bake for 30 minutes.

NotesThey keep well for 3 days in an airtight container at room temperature!
