Vegan Strawberry White Chocolate Blondies

The blondie has the texture of a brownie but without the chocolate, made with brown sugar (though honestly, I didn't have any this time, so I substituted with white sugar – it works just as well). Often, white chocolate is added. Here, I decided to pair it with in-season Quebec strawberries 😍 I make homemade white chocolate with just cocoa butter, powdered sugar, and vanilla. I have a recipe here, but I’ve changed my method a bit. I no longer use powdered milk because I can't find any near me that dissolves well. So now I use equal parts cocoa butter and powdered sugar, and I add a spoonful of vanilla paste.

  • -light brown sugar 160 (g)
  • -baking soda 1 (tsp)
  • -soy milk 100 (mL)
  • -all-purpose flour 250 (g)
  • -strawberries 140 (g)

  • Preheat the oven to 180°C (355°F).
  • Mix together the margarine and brown sugar until you get a creamy texture.
  • Add the baking soda and pour in the soy milk. Stir. Add the flour and mix again to form the dough.
  • Chop the white chocolate with a knife. Cut the strawberries in half. Add the toppings to the dough and mix one last time.
  • Pour the batter into a baking dish lined with parchment paper. Bake for 30 minutes.
  • Let cool, then cut into 9 squares. You can decorate them with a drizzle of melted white chocolate.
