Grandma's cookies vibes over here ;) You know those good old-fashioned Christmas coffee shortbread cookies? That's what I tried to recreate with this recipe. They're super comforting and can be stored for a week in an airtight container! Plus, I'm sure you already have all the ingredients at home ;)

  • -all-purpose flour 180 (g)
  • -sugar 100 (g)
  • -coconut oil 75 (g)
  • -salt 1 (tsp)
  • -baking powder 0.5 (tsp)
  • -instant coffee 1 (tbsp)

  • Warm the milk in a small saucepan or microwave. Dissolve the coffee in it.
  • Using an electric whisk, whip the coconut oil and sugar together until you have a frothy mixture. Add the milk to the coffee. Whisk again.
  • Add the flour, salt, and yeast. Continue whisking to achieve a uniform mixture.
  • Using a piping bag fitted with a fluted nozzle, pipe Danish biscuits onto a baking tray.
  • Place the baking sheet in the fridge for an hour to set the shape of the cookies and prevent them from deforming during baking.
  • Preheat the oven to 180°C (356°F). Bake for approximately 15 minutes. The edges of the cookies should be golden brown.
  • Allow it to cool and it's ready! You can keep them in an airtight container for a week :)
