Those who follow my Instagram stories know the why and how of these green muffins 😅 The other day, I made myself a green juice at home, without a juicer, so using a blender. I strained it to get the juice, but I didn't really want to throw away the leftover pulp :/ So I decided to make muffins with it! They are all soft, flavored with chocolate chips, and it avoids waste. They also freeze very well for having some in advance, ready for those little cravings 😍

  • -all-purpose flour 220 (g)
  • -sugar 110 (g)
  • -baking powder 1 (tsp)
  • -baking soda 1 (tsp)
  • -apple cider vinegar 25 (mL)
  • -neutral oil 25 (mL)
  • -chocolate chips 80 (g)

  • Preheat the oven to 180°C (355°F).
  • Mix the flour, sugar, baking powder, and baking soda.
  • Add the plant-based milk, vinegar, oil, and pulp. Whisk together to achieve a smooth batter.
  • Add the chocolate chips. Mix.
  • Divide the batter into 6 greased muffin tins. And bake for 30 minutes.

Notes*Baking powder = baking powder in Quebec
