Vegan Brookies (brownie + cookie)

I had never made a brookie before, even though I absolutely love them, and they're so simple to make - a layer of cookie dough topped with brownie batter, YUM! But the key is to have a really good cookie recipe and a really good brownie recipe to make the perfect brookie!

So here's my classic cookie recipe, which you already know, plus a new ultra-melty brownie recipe to pour on top before baking. The result is these brookies with a crunchy cookie dough base that's soft in the middle, and a super fudgy brownie top 😍 I highly recommend it ahaha!
