Mix the flour, sugar, yeast, salt, softened margarine, and soy milk in your blender, mixer, or by hand, whichever you prefer! The goal is to obtain a smooth dough.
Slice the vanilla pod in half and scrape the seeds to add them to your shortbread dough.
Spread the dough on parchment paper, on your oven's baking tray, and bake for 15 minutes.
As soon as you take your baking sheet out of the oven, cut out cookies with a cookie cutter or an upside-down glass.
Melt the chocolate in the microwave and dip the bottom of the cookies in it. Let it cool so the chocolate hardens. It's ready ;)
