We didn't know what this thing was called either, we just thought it was pretty so we looked it up: it's a babka, it's Polish, and besides being pretty, it's reeeally good ;) Because there's no age limit for having a snack, it's a great mix of brioche and spread, simply perfect! 

It's not very difficult to make, but still, we found the twisting part a bit delicate, so arm yourself with all your gentleness :D You can also find videos on the internet to see how to roll it all up! 

If you don't have any spread, replace it with 100g of melted chocolate + 100g of hazelnut butter + 100g of plant-based cream.

  • -all-purpose flour 400 (g)
  • -sugar 100 (g)
  • -salt 1 (pinch)
  • -coconut milk 240 (mL)
  • -fresh yeast 25 (g)
  • -coconut oil 65 (g)

  • Prepare the brioche dough: warm the coconut milk slightly and dissolve the yeast in it. Mix the flour, sugar, and salt (using a mixer if you have one) and then pour in the coconut milk and melted coconut oil.
  • Cover the bowl with a damp cloth and let the dough rise for 1 hour.
  • Degass and then roll out the dough on your work surface to form a large rectangle. Spread the spread (or melted chocolate with plant-based cream) all over the surface. Roll up the brioche to form a log. Cut the log in half lengthwise to obtain two strands and then twist the two strands together. Place the twist in a lightly greased loaf pan. Allow to rise again for 45 minutes.
  • Preheat your oven to 180°C (350°F). Bake for 25 minutes. You can then brush a little agave syrup on top to give it some shine!
