I was inspired by the Viennese baguette of my childhood to create this brioche baguette with chocolate chips 😍 I used part spelt flour, but you can use regular wheat flour according to your taste!

  • -all-purpose flour 300 (g)
  • -spelt flour 250 (g)
  • -plant-based margarine 75 (g)
  • -sugar 90 (g)
  • -salt 1 (tsp)
  • -dehydrated baker's yeast 1 (tbsp)
  • -chocolate chips 90 (g)

  • Warm the milk slightly (no hotter than your bath water!). Add the yeast to the milk, mix, and let it sit for 10 minutes.
  • In a mixing bowl, combine the flour, sugar, and salt. Pour in the warm milk and melted margarine. Knead by hand for just a few minutes until you have a smooth dough.
  • Moisten the top of the dough with a little water and let it rest for 1h30 under a tea towel.
  • Once the dough has risen, knead it for a few seconds to release the gas. Add the chocolate and mix.
  • Divide into two dough pieces and shape into two small baguettes. Place them on a baking sheet. Let rise for another 30 minutes.
  • Preheat the oven to 180°C (355°F).
  • Score the top of each baguette with the tip of a knife to help achieve even cooking as the baguettes expand in the oven.
  • Bake for 40 minutes. It's ready!

Notesmargarine can be replaced with coconut oil the yeast is dehydrated; if you use fresh yeast, you will need 20 g.
