I've seen them everywhere in the trendy bakeries on tiktok 😅 But of course, they're never vegan (however I'm hearing that there are vegan crookies at Sophie Sucrée in Montreal, good to know... but having moved away from Montreal I haven't had a chance to taste them but I'm sharing the info haha 😍).
Based on the same principle as an almond croissant, it's a day-old croissant soaked in a neutral syrup and stuffed with cookie dough, instead of frangipane! The cookie dough should stay soft when baking, so the center is almost raw to keep that true cookie feels 😍😍
