I want a crookie too! I've seen them everywhere in the trendy bakeries on tiktok 😅 But of course, they're never vegan (however I'm hearing that there are vegan crookies at Sophie Sucrée in Montreal, good to know... but having moved away from Montreal I haven't had a chance to taste them but I'm sharing the info haha 😍).

Based on the same principle as an almond croissant, it's a day-old croissant soaked in a neutral syrup and stuffed with cookie dough, instead of frangipane! The cookie dough should stay soft when baking, so the center is almost raw to keep that true cookie feels 😍😍

  • -plant-based margarine 105 (g)
  • -sugar 100 (g)
  • -baking soda 0.5 (tsp)
  • -all-purpose flour 150 (g)
  • -chocolate chips 50 (g)
  • -salt 1 (pinch)

  • Preheat the oven to 180°C (355°F).
  • Prepare the cookie dough: in a bowl, mix together the margarine and sugar to create a sort of cream. Then add the bicarbonate and plant-based milk, mix. Next, integrate the flour. Mix to form a dough. Add in the chocolate chips and a pinch of salt. Mix again and set aside.
  • Prepare the syrup: heat the water in a saucepan. When it starts to simmer, remove from the heat. Pour it over the sugar in a deep plate and mix.
  • Slice the croissants in thickness to open them up like sandwiches, but not all the way through. Dip them in syrup to moisten them all over.
  • Stuff the inside of the croissants with the cookie dough, setting aside some to add on top of the croissants. Decorate the top with the remaining dough and then bake for 18 minutes.
  • When the top cookie dough is just crispy and starts to turn golden, remove from the oven and serve! You can also add a chocolate drizzle.
