We've got another super light recipe for you to brighten up your chip-filled evenings: a vegan eggplant bagel that you can make even more substantial (you never know) with either hummus or barbecue sauce, or both at the same time (we're not responsible for the outcome though) if you're not afraid of flirting with gastronomic death.

By the way, we're currently in Canada, aka "the land of bagels," and we can assure you that it's a guaranteed belly-busting experience. We don't know yet if we'll come back unscathed... or if we'll come back at all.

  • Wash the eggplant and cut it in half lengthwise, then into thin half-moon slices.
  • Heat some olive oil in a pan to sauté the eggplants. Add a bit of water if necessary during cooking to make them nice and tender. Season with salt and pepper.
  • Wash your other vegetables and peel the onion. Slice the onion, bell pepper, and tomato into thin rounds.
  • Toast your bagel halves. Spread both sides with hummus (check out our recipe) or barbecue sauce, then top with warm slices of eggplant and vegetable rounds. And there you have it, it's ready ;)
