A super easy vegan cheese log for your holiday meals, made with cranberries and nuts ๐Ÿฅน๐ŸŽ„

 

I mention this every time, but it’s so important: choose fair trade cashews. I always recommend those from Umano, which are produced, harvested, and processed by a cooperative in Burkina Faso. This ensures shelling with steam and vegetable oil, fair wages, and direct importation.

  • -cashew nuts 100 (g)
  • -deodorized coconut oil 3 (tbsp)
  • -water 50 (mL)
  • -salt 1 (tsp)
  • -apple cider vinegar 1 (tbsp)
  • -Dried cranberries 35 (g)
  • -walnuts 30 (g)

  • Soak the cashews in water for 45 minutes if they are chopped, or 2 hours if they are whole. Drain them.
  • In your blender, combine the cashews, coconut oil, water, salt, and vinegar. Blend until smooth.
  • Chop the walnuts.
  • In a bowl, mix the cheese with the walnuts and dried cranberries. Transfer to plastic wrap and form a log by sealing the ends. Roll the log to shape it. Refrigerate for at least 4 hours.
  • Keep for up to 10 days.
