Today, I’m fixing this terrible mistake. Here’s my homemade poutine recipe: crispy fries, a mushroom-based gravy, and of course, cheese curds. The cheese curds are the main challenge for a good vegan poutine — we want that squishy, slightly firm cheese that doesn’t really melt and absorbs some of the sauce at the same time. Agar-agar plays a big role here for the texture, and soy yogurt adds that fresh tang!
