Not too long ago, I bought a huge pumpkin (such a practical thing, for two dollars, it feeds you for a whole week...), so I made a puree out of it and now we're eating it with everything, literally. And if we're going to put it everywhere, why not make a café latte out of it!

Well, we didn't invent anything new, pumpkin spice latte is pretty well-known. But we wanted to make it with real pumpkin inside, not some crappy Halloween flavored syrup!

And yes, by the way, if you have a life and don't have the time to cook a pumpkin, you can find cans of pure pumpkin puree, without salt and all that. Convenient, even for making other recipes like pumpkin pie ;)

  • -pumpkin puree 2 (tbsp)
  • -maple syrup 1 (tbsp)
  • -cinnamon 1 (bâton)
  • -4 spices blend 1 (tsp)

  • If you're making the pumpkin puree yourself: cook the flesh of a pumpkin in a pot of water (without salt). When the flesh is very tender, drain it. No need to blend, as the pumpkin turns into puree as soon as it cooks. Transfer it to a small saucepan over high heat and let as much water evaporate as possible, stirring well to dry out the puree. When it becomes quite thick (well, less liquid anyway), it's ready! You can use it in pies, muffins, or whatever you like.
  • In a saucepan, heat the plant-based milk with the cinnamon stick. Add the pumpkin puree, maple syrup, and 4-spice blend. Whisk to create a lovely froth and mix the ingredients well.
  • Pour the double espresso into a large cup or glass. Add the frothy milk on top.
  • You can add whipped cream by whipping coconut cream with an electric whisk along with a bit of powdered sugar.
