Yay, finally! I have the perfect recipe for vegan whipped cream in a siphon 😮For my grocery/cafe, Nutmeg, we wanted to offer an extra whipped cream option for hot beverages, but of course, vegan, zero waste, and easy for baristas to use. So we bought a siphon and I began testing! I tried several attempts with different fat additions to arrive at this light and very neutral-tasting recipe. Personally, I add vanilla, but it's up to your taste :) The plant-based milk can be any type; just choose the one you prefer in your sweet recipes <3

  • Pour the milk into a small saucepan and heat it up.
  • Split the vanilla bean in half and scrape out the seeds. Add them to the milk.
  • When the milk starts to simmer, pour it into a blender with the oil and sugar. Blend on the highest setting for 2 minutes.
  • Reserve in a jar and let rest in the fridge overnight.
  • The next day, pour the mixture into your whipper, add a gas cartridge. Shake the whipper upside down for 30 seconds, and it's ready to use! It's perfect on your desserts, ice cream sundaes, hot drinks, with strawberries, crepes, waffles...
