Find me a better name for this recipe, a crustless quiche? a tart? a frittata? a flan? What even is this? 😭

Okay, let me explain, it's a creamy tofu base like you would use to fill a quiche, topped with shallots and lots of zucchini slices arranged in a spiral. It's very soft and tender, and you can make it with other vegetables too. It's super good for your body... so many benefits! I added a bit of pesto after baking, but you can serve it just like that :)

  • -firm tofu 450 (g)
  • -soy milk 200 (mL)
  • -salt 1 (tsp)
  • -spices 1 (tbsp)
  • -cornstarch 4 (tbsp)
  • -olive oil 3 (tbsp)
  • -shallots 1
  • -zucchini 2
  • -pepper

  • Preheat the oven to 190°C (375°F).
  • In your blender, mix the tofu with soy milk, salt, cornstarch, and your choice of spices: curry, tandoori, Cajun, turmeric, fenugreek, paprika...
  • In a pie dish, pour a drizzle of oil. Add the blended mixture and spread it evenly across the dish.
  • Peel the shallot and thinly slice it. Top the flan base with the shallot.
  • Slice the zucchini into rounds and arrange all the slices in a rosette pattern on the flan base. Finish with a drizzle of olive oil and a bit of pepper, then bake for 50 minutes. It's ready!
