Beer, Mushroom, and Lentil Terrine

I created this recipe for the Guinness Instagram account, but I love it so much that I'm sharing it here too! It's quick to make and perfect if you want to bring it to friends' places 😍

  • -Paris mushrooms 230 (g)
  • -shallots 1
  • -cooked green lentils 500 (mL)
  • -walnuts 100 (g)
  • -Guinness beer 60 (mL)
  • -buckwheat flour 75 (g)
  • -chopped flat-leaf parsley 125 (mL)
  • -soy cream 125 (mL)
  • -olive oil 1 (tbsp)
  • -salt
  • -pepper

  • Line a loaf pan with parchment paper (or grease it) and preheat the oven to 200 degrees C (390 degrees F).
  • Slice the mushrooms. Peel and also slice the shallot.
  • In a skillet, heat the olive oil. Sauté the shallot until it’s translucent. Then add the mushrooms.
  • Cook for 5-6 minutes. Deglaze with the beer.
  • Transfer to your blender. Add the lentils, walnuts, parsley, and soy cream. Blend (it doesn’t need to be perfectly smooth).
  • Add the flour and mix with a spatula.
  • Pour into the loaf pan and bake for 40 minutes.
  • Let cool slightly before serving. And it's ready to enjoy with fresh baguette and pickles 😍
