My sweetheart absolutely loved these lil' snacks, saying they reminded him of Kinder Country, which gave me the idea of making vegan Kinder Country someday π
In the meantime, these little bites are peanut butter puffed rice balls with banana inside, all coated in chocolate... seriously, what more could you ask for ?
Mix the peanut butter and maple syrup. Add the puffed rice and mix.
Divide the mixture into 6 portions. Use your hands to flatten each small portion and add a slice of banana in the middle. Seal each little ball. Place in the refrigerator.
Melt the chocolate with the oil so that it's nice and smooth.
Coat the balls with chocolate. Place them in the fridge for half an hour so the chocolate hardens! Store in the fridge in a container for up to 3 days max!
NotesIf your peanut butter is already sweetened, feel free to skip the maple syrup ;)
