In my opinion, ciabatta is the easiest homemade bread to make, so it’s perfect if you’re just starting out! I’m sharing a version using baker’s yeast here so that it’s accessible to everyone. I also make it with sourdough—if you’d like the sourdough method, you can follow the process in my sourdough pizza recipe, as it’s the same steps and resting times.

What makes ciabatta especially easy to succeed with at home—even without special equipment—is that it’s a very high-hydration dough, with no kneading involved. You simply cut it into baguette shapes without needing to shape it, and bake it in a regular oven! No pizza oven or Dutch oven required—nothing at all. It’s like baking a cake, just with an added resting time, and that’s it.
