Homemade Pumpkin Spice Syrup

A basic recipe that I had actually never shared here! This fall, I bought a can of pumpkin puree and froze cubes in an ice cube tray so I could use them little by little. For example, here I used 3 cubes (about 125 mL), which is super convenient. And this amount of syrup will make me about 8 cups of pumpkin lattes.

  • -sugar 200 (g)
  • -water 250 (mL)
  • -pumpkin puree 125 (mL)
  • -cinnamon stick 1 - optional
  • -star anise 3
  • -ground cinnamon 1 (tsp)
  • -ginger powder 1 (tsp)
  • -clove 2 - optional
  • -nutmeg 1 (pinch) - optional

  • In a saucepan, mix the water, sugar, pumpkin puree, and all the spices. Bring to a boil for about ten minutes.
  • Strain the mixture and pour it into a glass bottle. Keep it in the fridge for up to a month!
  • To make your latte: brew your espresso and add a tablespoon of pumpkin spice syrup. Then pour about 170 mL of heated, frothed oat milk!
