It's Christmas! Well, almost... but it's time to get in the mood, don't you think? So let's indulge in Christmas carols, Christmas hot chocolates, Christmas movies, Christmas trees, Christmas presents, Christmas candles, Christmas recipes... and Christmas orangettes, of course.

If you don't know what orangettes are (you must be from another planet, but we love you anyway), they are candied orange peels dipped in chocolate. When the chocolate cools, it forms a crunchy coating around the orange peel, and it's super delicious :-D!

It's often recommended to choose untreated oranges since we're going to eat the peel... But at the same time, we're going to blanch the peels in boiling water three times, so we think that, thanks to this process (which removes bitterness), we will also remove pesticides, right?   • Peel the skin of the oranges with a knife from top to bottom. Using a small, flexible knife, remove all the white pith if possible, keeping only the orange peel. Slice your pieces of peel into thin strips.
  • Place your strips in a saucepan of cold water and heat it. When it boils, drain them. Add cold water again and repeat the process two more times. Blanching the orange peel three times helps to remove the bitterness!
  • In a saucepan, bring 0.8 L of water and sugar to a boil. Add the slices and let them simmer over low heat for 30 minutes. If the water evaporates too much and the sugar crystallizes or caramelizes, add more water.
  • Drain the strips of peel well and let them dry a little in the open air.
  • Melt the chocolate in a double boiler and dip your candied orange peels one by one into the chocolate. Place them on a sheet of parchment paper and refrigerate for one hour! It's ready!
