Vegan Kinder Country

Vegan Kinder Country
For: 2 tabletsDifficulty: EasyPreparation: 10 minFridge: 1h30

Typically, kinder country features puffed wheat, but I had some puffed rice left over from this banana snack recipe, so I decided to make chocolate bars with a kinder country style, using puffed rice (or puffed wheat), white chocolate, and yogurt!

For a more authentic kinder country taste, I recommend using vegan milk chocolate for the coating, or at most 50% cacao, otherwise, it will be more chocolatey than kinder ;) But if you prefer dark chocolate, go ahead, it's super tasty too!

You can temper the chocolate to make it shinier and less melty on your fingers if you want and if you have a thermometer. I didn’t do it, and it works just fine 😍

My homemade vegan white chocolate recipe is here!

  • Melt the chocolate with the grapeseed oil, using a double boiler or microwave.
  • Pour it into your tablet mold in a thin layer to cover the entire bottom and sides. Turn the mold to let any excess drip out. Collect the excess and set it aside for later. Place the mold in the freezer for 10 minutes.
  • Melt the vegan white chocolate using a double boiler or microwave. Mix it with the yogurt and popped wheat (or puffed rice).
  • Pour this mixture into the mold. Return to the freezer for 15 minutes.
  • Melt the excess chocolate and pour it over the mold to cover the bar and seal in the puffed wheat filling. Place in the freezer for at least one hour.
  • Unmold and it's ready! Keep in the fridge for up to 5 days!
