Chicken pasta with curry and coconut milk is a classic weeknight dish in many families ;) So I thought it could be really good with my chicken-style tofu recipe too! And yes, we absolutely loved this dish 😍 It's so simple and comforting!
Prepare the tofu like chicken: tear the tofu by hand into large chunks. Mix them with all the ingredients of the marinade. Place them on a baking sheet with parchment paper and bake for 20 minutes.
While waiting, prepare the sauce: peel and finely chop the half onion. In a saucepan, heat 1 tbsp. of oil and sweat the onion for a few minutes.
Add the broth and curry. Bring to a boil and let the sauce reduce for a few minutes. Then pour in the coconut milk. Season to taste. Set aside.
Cook the pasta: Bring a large pot of water with coarse salt to a boil and add the spaghetti for 10 minutes of cooking time. Drain.
Mix the chicken tofu in the curry sauce and pour over the spaghetti.
