I’m the self-proclaimed queen of scrambled tofu 😅 I make it for almost every brunch, and everyone loves it for its creaminess 🥹 For everyday meals, I keep it as simple as possible: just tofu, nutritional yeast (a must for that rich flavor), turmeric, soy cream, and a bit of salt and pepper!

When you have extra time, you can add half a chopped onion! It keeps all week in the fridge, perfect for your breakfasts or lunches.

  • -firm tofu 230 (g)
  • -neutral oil 1 (tbsp)
  • -turmeric powder 1 (tsp)
  • -nutritional yeast 3 (tbsp)
  • -soy cream 65 (mL)
  • -salt
  • -pepper
  • -water 85 (mL)

  • In a pan, heat the oil. Crumble the tofu roughly by hand into the pan (no need to crumble it completely; you’ll mash it later).
  • Cook it with the turmeric, nutritional yeast, water, salt, and pepper.
  • After about 5 minutes, once the tofu has softened, mash it with a potato masher to make it nice and creamy.
  • Pour the soy cream and remove from heat. Toast the bread and top it with the scrambled tofu. You can also add a little sriracha sauce on top!
