One of my favorite toasts for the morning or a quick lunch 😍 The idea is to recreate a guacamole but with peas instead of avocados! It’s cheaper, more eco-friendly, and just as delicious. I spread it on my toast in the morning, with spiced roasted chickpeas, for example, or a tomato in the summer.

For weekday mornings, I recommend prepping the poicamole and roasted chickpeas for 3 to 5 days in advance, keeping them in the fridge—it’s super practical!
