I’ve been wanting to try making my own Just Egg for a long time, which is usually made from mung beans. Just Egg is super expensive, but mung beans are really great for health, so I thought it would be a good idea!
But then I realized that peeled mung beans (the yellow ones, not the green ones) are not easy to find. So even if I had found some (I’m anticipating the kind people who will share their secret grocery store addresses where they sell it), it would have been tricky to make the recipe accessible to everyone, which is kind of the goal of my work 😅
So I decided to create a recipe using yellow peas and silken tofu, both of which are widely available in grocery stores and also very good for health. This omelette is the perfect little breakfast for your week. I make the mixture in advance and store it in a glass bottle for up to 5 days 😍
I added a bit of turmeric for even more health benefits right from the morning.
