This is the perfect recipe for your brunch this weekend! For those who have already tried my red lentil pancakes, it's the same principle, it's super simple because everything is done in the blender ✨ I served it with scrambled tofu, half an avocado, and Buffalo sauce!

  • -all-purpose flour 120 (g)
  • -soy milk 65 (mL)
  • -lemon 0.5
  • -baking soda 1 (tsp)
  • -baking powder 1 (tsp)

  • Drain and rinse the white beans. In your blender, put the white beans with the flour, soy milk, juice of half a lemon, baking soda, and baking powder. Blend at maximum power until you get a smooth and thick batter.
  • Heat a non-stick pan and oil it. When it's hot, ladle some pancake batter onto the pan and spread it to make discs about 12 cm in diameter and half a centimeter thick. They'll puff up quite a bit while cooking! The batter makes 4 pancakes. I did two batches of two pancakes, but adjust according to the size of your pan.
  • Flip the pancakes to cook on the other side for about a minute. Then remove from heat.
  • On plates, serve two pancakes filled like a sandwich with scrambled tofu, Buffalo sauce, smoked fauxmon... whatever you like!
