Since this fall, I’ve reconnected with chickpea omelettes 😅 I make them almost every morning! Especially when I don’t know what to eat. They’re super quick and budget-friendly: just chickpea flour and water, seasoned however you like. The only trick is to avoid overcooking the omelette to keep it from turning into a dry pancake 🫣
