Small Vegan Air-Fryer Fritters

- -all-purpose flour 250 (g)
- -sugar 55 (g)
- -dehydrated baker's yeast 1 (tsp)
- -plant-based milk 150 (mL)
- -plant-based margarine 40 (g)
- -neutral oil 3 (tbsp)

Steps
- Prepare the batter: warm up the plant-based milk and add the yeast (if the milk is too hot, you'll kill the yeast, think of a lukewarm bath temperature!). Let it rehydrate for about 20 minutes (if it's winter: near a heat source).
- Melt the margarine.
- In a mixing bowl, combine the flour and sugar. Pour in the warm milk and melted margarine. Mix together to form a dough, without kneading. Allow to rest for 10 minutes.
- Fold the dough over itself several times to help it develop. Then, cover the bowl with a damp cloth and let it rest for 1h30.
- Deflate the dough and shape it into a 2 cm thick log. Cut around fifteen pieces from it and roll them by hand to make small balls. Place a damp cloth over them again and let it rest for 1 hour.
- Set your airfryer to 392 degrees Fahrenheit. Brush the doughnuts with the neutral oil. Place them in the airfryer for 6 minutes of cooking time.
- Mix the sugar and cinnamon and roll the donuts in it!
