Vegan Donuts in the Air-fryer

Now I'm a little bit proud... I surely didn't reinvent the wheel, but I got the idea to put donuts in an air-fryer 😳😮

I love donuts, but I hate deep-frying at home. I don't have a deep-fryer, I find it annoying to use so much oil that will be used up, and I never know how to get rid of used oil... long story short, it's too complicated. And oven-baked donuts, let's agree that they're not donuts, they're just buns 😅

However, I do have an air-fryer. If you don't know what that is, it's like a mini convection oven that blasts air to crisp things up and mimic frying. Just by brushing a little oil on potatoes, you get a french fry texture! By the way, my "tofu chicken" recipe is really good in the air-fryer ;) Anyway, I brushed my donuts with oil, and presto, it worked amazingly well! They're soft and tender on the inside, with a slight fried taste on the outside. Of course, they're not soaked in oil, but they're perfect for simple homemade donuts!

For the batter
  • -all-purpose flour 250 (g)
  • -sugar 55 (g)
  • -dehydrated baker's yeast 1 (tsp)
  • -plant-based margarine 40 (g)
  • -neutral oil 3 (tbsp)
  • -icing sugar 200 (g)

  • Prepare the batter: warm the plant-based milk slightly and add the yeast (if the milk is too hot, you'll kill the yeast, think of a lukewarm bath temperature!). Allow it to rehydrate for about 20 minutes (if it's winter: near a heat source).
  • Melt the margarine.
  • In a mixing bowl, combine the flour and sugar. Pour in the warm milk and melted margarine. Mix to form a dough, without kneading. Let rest for 10 minutes.
  • Fold the dough over itself several times to help it develop. Then, cover the bowl with a damp cloth and let it rest for 1h30.
  • Degass the dough and roll it out on your floured work surface, to about 2 cm thick. Cut out circles using a lid or an upside-down glass (about 9 cm in diameter). And also cut a hole in the middle of each donut (1-2 cm in diameter).
  • Place a damp cloth over the donuts again and let them rest for 1 hour.
  • Preheat the air-fryer to 200°C (390°F). Place the donuts in the basket and cook for 8 minutes.
  • Meanwhile, mix half of the powdered sugar with 100 mL of water to create the transparent coating.
  • Completely dip the donuts in the coating and place them on a rack to drain.
  • In the remaining coating, add the rest of the icing sugar to make the white glaze. Dip just the top of each donut to create the glazed decoration. It's ready! The donuts also freeze very well for your future cravings.

NotesI use dehydrated yeast. For fresh yeast: multiply the weight by three.
