You see this right here? It's our "cake for the week" that we make on Sunday night. Well, actually, it only lasts until Tuesday at the latest, but the intention is there, and that's what counts ;)

It's a cake that keeps well (wrapped in a cloth on the worktop), is super quick to make, and doesn't cost much... basically, this little guy's got all the great qualities!

For the French folks, maple syrup is pretty expensive over there. So to replace it with sugar: use 70g of sugar and 200 mL of plant-based milk (instead of 150 mL).

  • -maple syrup 80 (mL)
  • -neutral oil 60 (mL)
  • -apple cider vinegar 10 (mL)
  • -all-purpose flour 280 (g)
  • -baking powder 1 (tsp)
  • -salt 1 (tsp)

  • Mix the maple syrup, oil, milk, and vinegar.
  • Add the flour, yeast, and salt. Mix well.
  • Peel the apples and cut them into strips. Add them to the mixture. You can also add pecans or whatever you like.
  • Pour into a previously greased loaf pan.
  • Bake for 45 minutes at 180°C (356°F).

NotesTo jazz up your cake, you can add pretty much whatever you want to the batter, I love throwing in some pecans or cinnamon, for example :)
