Make the cake batter: mix the flour, sugar, baking soda, and baking powder. Add the soy milk, neutral oil, amaretto, apple cider vinegar, and vanilla. Whisk the batter until smooth!
Peel an apple and dice it. Add it to the cake batter. Pour the batter into a round baking pan (I used a 6-inch diameter pan).
Peel the other two apples and cut them into quarters. Arrange the quarters on the cake dough in a rosette pattern.
Prepare the almond cream: mix all the ingredients together and pour it into the mold over the apples.
Bake for an hour at 355Β°F (180Β°C).
