For me, I love having delicious things in the morning, like it's impossible to make me eat toast (no offense if you love toast, but still...), I've always been super picky about breakfast 😅 So this little parfait is exactly what I need on summer mornings, with good, fresh Quebec strawberries!

I make a tightly packed granola to form big chunks! And I layer it with plain vegan yogurt (here I used soy and cashew yogurt), and sliced strawberries.

It also works really well as a dessert in the evenings, not just for breakfast ;)

For the granola
  • -maple syrup 45 (mL)
  • -coconut oil 80 (g)
  • -flower of salt 1 (pinch)
  • -sesame 50 (g)
  • -oat flakes 180 (g)

  • Preheat the oven to 180°C (355°F).
  • Prepare the granola: In a bowl, mix all the ingredients. Spread everything on a baking sheet and press the granola down with a spatula.
  • Place in the oven for 20 minutes of cooking (keeping an eye on it from time to time in case your oven is too powerful...).
  • In a bowl, mix the plain yogurt and 60 grams of sugar.
  • Cut all the strawberries in half and mix them with 20 grams of sugar.
  • Break the granola into large chunks.
  • In 4 glasses, alternate layers of granola, yogurt, and strawberries! Decorate the top with a little bit of granola and a strawberry quarter :)
