These pancakes are my weekday breakfast when I want a change from chia pudding or scrambled tofu. They are super high in fiber and very wholesome. Thanks to the fruits and this absolutely delicious almond butter (which seriously tastes like marzipan), I tend not to add sugar, but it would also be great with maple syrup if you want!
