These pancakes are my weekday breakfast when I want a change from chia pudding or scrambled tofu. They are super high in fiber and very wholesome. Thanks to the fruits and this absolutely delicious almond butter (which seriously tastes like marzipan), I tend not to add sugar, but it would also be great with maple syrup if you want!

  • -whole wheat flour 75 (g)

  • In a bowl, mix all the pancake batter ingredients together with a spoon or a whisk.
  • Heat a lightly oiled skillet, and form 2 pancake batter circles in the pan. Cook for about 2 minutes on each side until they are nicely golden.
  • Serve with all the toppings, or your favorites!
