I don’t know if you’ve seen this little trend of covering porridge with a thin layer of chocolate to make it super indulgent 🥹 But I wanted to show my coconut-chocolate version!

You can choose to make it as ‘overnight oats,’ so without cooking: simply mix the ingredients the night before, pour the chocolate layer on top, and leave it in the fridge overnight. The oats and chia seeds will swell up in the milk.

Or cooked, as porridge, 3-4 minutes on the stove, the same morning!

  • -oat flakes 45 (g)
  • -grated coconut 25 (g)
  • -chia seeds 2 (tbsp)
  • -soy milk 250 (mL)
  • -dark chocolate 40 (g)
  • -coconut oil 1 (tsp)

  • Overnight method: In a bowl, mix the oats, coconut, chia seeds, and soy milk. Let it sit in the fridge.
  • In the meantime, melt the chocolate with the coconut oil to liquefy it. Pour the chocolate over the top of the bowl and sprinkle with coconut. Place it in the fridge overnight and enjoy the next day.
  • Quick porridge method: In a saucepan, cook the oats, coconut, chia seeds, and soy milk for about 3-4 minutes. When it thickens, remove from heat and pour into a bowl. Place it in the freezer.
  • “In the meantime, melt the chocolate with the coconut oil to liquefy it. Pour the chocolate over the bowl and sprinkle with coconut. Place it in the freezer for 5 minutes to harden the chocolate, then enjoy!”

NotesDepending on the size of your bowl, 20 g of chocolate per person may be enough to cover it with a thin layer!
