I've seen this everywhere on social media, but always with a ton of eggs (it's basically an omelette π), so here's my egg-free version π It's perfect for a nice breakfast or brunch!
In a bowl, whisk together the sugar and cornstarch. Add the plant-based milk and whisk again. Then add the yogurt and vanilla extract. Mix one last time.
Place your slices of bread on a baking sheet lined with parchment paper. Using the back of a spoon, press down the crumb everywhere to form a hollow lower than the crust.
Pour each slice, pour the clafoutis mixture to fill it. Add frozen (or fresh) berries. Bake for 20-25 minutes until the clafoutis part is golden π Dust with powdered sugar!
