Vegan French Toast with Peach and 4 Spices

In case you're living under a rock and you don't know what it is, here's a reminder: basically, you take some old stale bread (sounds appealing right? ;-) ) and you let it soak in a milk-based mixture, flavored with whatever you fancy! Then, you brown your bread slices in a pan and enjoy them as a snack or breakfast spread with jam, maple syrup, or just sugar. You can also make it into a beautiful dessert by pairing it with a mandarin compote and sorbet! For this late summer, we flavored our vegan French toast with allspice, but you can use vanilla or cinnamon if you prefer :-D!

  • -stale bread 2 (slices)
  • -all-purpose flour 100 (g)
  • -Brown sugar 40 (g)
  • -soy milk 350 (mL)
  • -4 spices blend 1 (tsp)
  • -plant-based margarine 1 (tsp)
  • -peach 2

  • Make the crepe batter: whisk the flour and sugar. Pour in the soy milk and whisk again. Add the vanilla extract and mix one last time.
  • Soak the slices of bread in the mixture. If the bread is stale, you can leave them soaking all night. Here I had fresh bread so 5 - 10 minutes was sufficient.
  • Heat the margarine in a frying pan. When it's nice and hot, place the slices of bread in. Cook for about 4-5 minutes on each side until it's nicely golden.
  • Cut the peaches in half. In the same pan, without washing it or adding any fat, grill the peaches on both sides for about 4 minutes. Serve the peaches on the french toast with a bit of brown sugar and/or jam! It's ready 🥰🥰.
