The fruit version of this real breakfast gem! If you’re the type who never knows what to eat in the morning—and you’ve got a bit of a sweet tooth—I’ve got the perfect recipe for you. Inspired by baked oatmeal, this version is blended into a smooth batter so you get something more like a soft, fluffy cake. It’s sweetened only with a banana and blueberries, making it a great way to enjoy whole, nourishing ingredients first thing in the morning—think fiber and plant-based protein. You can even add protein powder if you like. I usually don’t use any myself (I don’t need it), but someone gifted me some, so I gave it a try in this recipe!

  • -oat flakes 120 (g)
  • -chia seeds 30 (g)
  • -soy milk 375 (mL)
  • -Vegan protein powder 20 (g) - optional
  • -baking soda 0.5 (tsp)
  • -baking powder 0.5 (tsp)
  • -apple cider vinegar 1 (tbsp)
  • -frozen blueberries 50 (g)

  • Preheat the oven to 205°C (400°F).
  • In a blender, combine the banana, oats, hemp seeds, soy milk, baking soda, baking powder, vinegar, and protein powder if using. Blend until smooth.
  • Pour the mixture into ramekins (no need to grease them). Add the blueberries and gently stir them into the batter. You can also add almond flour, vanilla extract, or any fruits you like.
  • Bake for 20 minutes and it’s ready!
