If you think you're clueless when it comes to making pretty decorations on cakes, I'm going to prove to you that it only takes next to nothing! No need for sugar paste, weird colorings, glitter everywhere, tiny flowers, and not-so-pretty maxi-girly-pink hearts... Just stuff you probably have in your cupboards!

First of all, my cake recipe for these vegan cupcakes is just how I like it: you put everything in the blender, mix it, and, bimbam boom, cake batter! Isn't that great? Plus, it's a yogurt cake (with soy) so no need to weigh everything, and that's cool for saving time!

  • -sugar 200 (g)
  • -all-purpose flour 225 (g)
  • -plant-based margarine 50 (g)
  • -baking powder 1 (tsp)
Icing
  • -icing sugar 100 (g)
  • -water 50 (mL)
  • -plant-based margarine 50 (g)
  • -pearl sugar

  • Preheat the oven to 180°C (356°F).
  • Cut the bananas into small pieces. In your blender, blend the yogurt with the bananas, add the sugar, flour, and baking powder, and blend again.
  • Melt the margarine and add it in.
  • Mix one last time.
  • Pour the mixture into your paper liners and bake for 20 minutes (or 15 if the molds are small).
  • Meanwhile, prepare the icing: whisk the margarine until it has a "cream" texture, mix the powdered sugar and water, and add the margarine. To achieve the perfect texture, you may need to add a little more powdered sugar to make it thicker or more water to make it thinner.
  • Keep this mixture in a piping bag with a fluted nozzle in the fridge.
  • Once you've taken the cupcakes out of the oven and they've cooled down a bit, decorate them with frosting and sprinkle them with sugar pearls. I also used maple sugar for decoration. It comes from Canada, but you can find it online.
