Wasn’t my site missing a good Caesar salad recipe? I really love this creamy, cheesy-flavored dressing with capers, romaine lettuce, croutons, and roasted chickpeas… it’s such a simple and quick salad! 🌱
Cut the bread into croutons. On a baking sheet lined with parchment paper, arrange the chickpeas on one side, seasoned with paprika, a drizzle of olive oil, and a pinch of salt—mix well. Place the croutons on the other side with a drizzle of olive oil. Bake for 15 minutes.
Cut the romaine lettuce into strips.
Prepare the dressing: In a bowl, mash the capers with a fork along with the parmesan and mustard. Add the oil and keep mixing with the fork to thicken the dressing. Finally, add the cream, lemon juice, and a pinch of salt to complete the sauce.
In a large bowl, combine the lettuce, roasted chickpeas, croutons, vegan shredded cheese, and the dressing! Toss well and serve.
