I’m obsessed with okonomiyaki, (The famous Japanese cabbage recipe, kind of like a delicious savory pancake) but it’s pretty rare to find vegan-friendly ones at restaurants (shoutout to Umami, you guys are the best!). So ever since I moved to the countryside, I’ve been making my own 😅 Someone asked me for more cabbage-based recipes, so this is perfect timing!
My version is simplified to use easy-to-find ingredients—so no dashi broth, for example! It’s a super quick and simple meal that the whole family usually loves 😍 For toppings, I went with grilled tofu and sautéed shiitake mushrooms!
