Lately, I've been loving adding a bit of Beyond Meat sausages everywhere ahah... it makes a dish super indulgent and comforting right away! Also, I'm in love with delicata squash this year, they are small and suitable for 1, 2, 3 serv. meals, sweet and firm, it diversifies my squash landscape a bit 😅

With that, in these quesadillas, I added my melted cheese like in the white pizza from the other day, so it's kind of a gathering of everything I love eating right now!

This week, I received some delicata squash in my Second Life basket. I've talked about it a million times because I've been subscribed to their baskets for 3 years ahah 😅 They are vegetables destined for the trash, "ugly" (really not ugly in reality) or surplus inventory. They are assembled in baskets of various sizes, organic or not, local or international, so all prices and tastes 🤷‍♀️Over the years, I have modified my subscription many times to match my needs at the moment, and that's nice 😛 Currently, I have an international basket for 4 serv. and a fruit basket for 3, which I share with my associates. We get it delivered to work and share everything according to our desires, so I only take things I'm sure to consume! It costs us about $53, divided by 3 so really not expensive t’sais...

SecondLife asked me to create a recipe with their vegetables so I came up with these super comforting quesadillas 🥰

  • -delicata squash 2
  • -beyond meat sausage 2
  • -wheat tortilla 4
  • -olive oil 30 (mL)
  • -salt
  • -pepper
For the melted cheese
  • -tapioca starch 40 (g)
  • -soy milk 250 (mL)
  • -salt
  • -plant-based margarine 50 (g)
  • -beer 80 (mL)

  • Preheat the oven to 180°C (356°F). Cut the squash in half lengthwise and remove the middle part containing all the seeds. With the tip of a knife, make small cuts into the flesh and drizzle a bit of olive oil over each half of the squash, along with some salt and pepper.
  • Place the halved squashes on a baking sheet and bake for about 50 minutes, until the flesh is tender.
  • Crumble the Beyond Meat sausages into small pieces and sauté them in a pan until nicely browned.
  • Prepare the melted cheese: heat the margarine in a saucepan until it begins to brown (like browned butter). Deglaze with beer. Add the tapioca starch, and whisk. Add the soy milk and a generous pinch of salt. Whisk (or blend) again. Allow to heat until the mixture thickens and forms strings like melted cheese.
  • Scoop out the flesh of the squash with a spoon and season it in a bowl with salt and pepper according to your taste.
  • In the wheat tortillas, place some pumpkin flesh on one half, add pieces of sausage on top, and some melted cheese. Fold the tortillas closed.
  • Heat a frying pan with a drizzle of oil. And cook the quesadillas on both sides so that the tortillas are nicely golden.
  • Cut the quesadillas in half or into 4 to make triangles! And serve :)
