Honestly, I've never eaten a frittata before, but I really loved this recipe! Especially the light curry seasoning, it was delicious. And it's such a great idea for using up all the leftover veggies in your fridge ;) It makes a complete meal, it's full of tofu and vegetables, so it's good for your little body as well as being tasty in your mouth ;)

I know that in many vegan frittata recipes, there's kala namak (black salt) to mimic the taste of eggs. Personally, I find it disgusting ahah... but if you like it, then this is the perfect recipe to add it!

the frittata base
  • -firm tofu 450 (g)
  • -nutritional yeast 30 (g)
  • -cornstarch 50 (g)
  • -salt 5 (g)
  • -curry 1 (tbsp)
  • -paprika 1 (tsp)
  • -dried Provence herbs 1 (tsp)
the vegetables
  • -bell pepper 1
  • -green onions 1 (bunch)
  • -fresh spinach 1 (handful)
  • -cherry tomatoes 10
  • -red onion 1
  • -salt
  • -pepper
  • -thyme 2 (branches)
  • -olive oil 3 (tbsp)

  • Thinly slice the scallions and cut the bell pepper into small cubes. Peel the red onion and cut it into wedges.
  • In a pan (ideally, a pan that can also go in the oven), heat the oil over high heat. Sauté the spring onions and red onion in it.
  • Add the diced bell pepper. Let it cook until everything is nicely browned. Finish by adding the spinach and fresh thyme leaves. Season with salt and pepper.
  • Preheat the oven to 180°C (355°F).
  • Prepare the frittata base: blend all the ingredients in your blender.
  • Pour the mixture into the pan and stir. Smooth the top and arrange all the cherry tomatoes cut in half (if your pan is not oven-safe, first transfer everything into an oiled gratin dish before adding the cherry tomatoes on top!).
  • Bake for 40 minutes. And it's ready!

Notesthe recipe is for using a whole block of tofu (usually 450g).
