We shouldn't underestimate the benefits of a friendly meal in the put-everything-on-the-table-and-fend-for-yourselves style! I must admit, when I don't know what to cook (which is, uh...all the time), I go for wraps or some kind of Mexican burritos. As a major lazybones, I love the concept of just preparing the ingredients and everyone deals with stuffing their own little tortilla with whatever is on the table :-).
So, it's my favorite recipe that I'm presenting to you today! Let's be clear, it's not really suitable for the current temperature (which doesn't really allow for eating anything hot) but at worst, keep it in a corner of your mind for when the weather is cooler!
I put in a preparation of vegetables and red beans, avocado, cherry tomatoes, more avocado, gem lettuce, and Mexican sauce. As usual, wheat tortillas mean adaptable recipe: you can add the ingredients you like or replace the sauce with guacamole or tzatziki, for example!
