Vegetable Pizza with Arrabiatta Sauce

Pizza is one of our favorite dishes. Ok, when we say it like that, it sounds like five-and-a-half-year-old kids talking, but there are a million possibilities with pizza! And it's so quick to make! Most of the time, we make the dough by eyeballing it, but for the sake of the recipe, we did weigh the ingredients, don't worry :-) .

We didn't use vegan cheese because we prefer it that way. It also highlights the taste of the vegetables. But you can find vegan cheese here, if you want. On the other hand, we used arrabiatta sauce, but you can also make it without chili peppers (for the sensitive souls) or add just a little bit to spice it up just right!

  • -all-purpose flour 300 (g)
  • -olive oil 80 (mL)
  • -dehydrated baker's yeast 5 (g)
  • -salt 5 (g)
  • -water 100 (mL)

  • -tomatoes 3

  • -bird's eye chili 1
  • -salt
  • -pepper

  • The dough: Preheat the oven to 50°C (122°F). Dissolve the yeast in warm water and wait 15 minutes. Mix the flour and salt. Add the oil and water with the yeast and knead with your little hands. You'll probably need to add a bit more water to form a ball! When you have a nice ball, place it in your 50°C (122°F) oven to let it rise (about 20 minutes). Then take it out of the oven and roll it out. In preparation for baking the pizza: increase the temperature of your oven to 200°C (392°F).
  • The sauce: Peel the onion and wash the tomatoes. Thinly slice the onion and dice the tomatoes. Sauté the onions with olive oil in a saucepan, then add the tomatoes. Cook covered for 15 minutes over very low heat. Add the chopped chili pepper, salt, and pepper. Blend everything using a blender and adjust the seasoning. At the last moment, add the basil. Spread a layer of sauce on the raw pizza dough.
  • Finishing touches: Wash the eggplant, bell pepper, and cherry tomatoes. Slice the eggplant thinly and cut the bell pepper into strips, then cut the cherry tomatoes in half. Arrange everything on the pizza and finish with some olives. Bake the pizza for 20 minutes at 200°C (392°F). When it's cooked, sprinkle some arugula leaves over it and enjoy (without burning your tongue, my little one).
