In a saucepan, heat the cloves of garlic (with the skin on!) with the olive oil. Let them fry in the oil for about 8 minutes until the cloves are nicely golden all over on the outside!
Let everything cool down.
Retrieve the garlic cloves and set aside the oil separately.
Peel the cloves (the flesh will separate easily as the skin is fried) and finely chop the flesh to make a puree.
Mix the cooled oil, garlic puree, lemon juice, paprika, oregano, salt, and harissa!
Brush your skewers, seitan pieces, vegetables, etc., with the marinade. Let them marinate for as long as you can (anywhere from 5 minutes to overnight).
