  • In a saucepan, heat the cloves of garlic (with the skin on!) with the olive oil. Let them fry in the oil for about 8 minutes until the cloves are nicely golden all over on the outside!
  • Let everything cool down.
  • Retrieve the garlic cloves and set aside the oil separately.
  • Peel the cloves (the flesh will separate easily as the skin is fried) and finely chop the flesh to make a puree.
  • Mix the cooled oil, garlic puree, lemon juice, paprika, oregano, salt, and harissa!
  • Brush your skewers, seitan pieces, vegetables, etc., with the marinade. Let them marinate for as long as you can (anywhere from 5 minutes to overnight).
