One-Pot Smoked Tofu Rice, Super Simple

I wanted to try making a one-pot rice dish with ginger, soy sauce, smoky tofu, and veggies… but I didn’t expect to love it so much! I ended up eating it for lunch and dinner the day before yesterday, and again for lunch yesterday, so I had to share the recipe 😍 What’s really great is that you don’t need to watch over it while it cooks. Just cover it and come back 20 minutes later! I made mine with the veggies I had in the fridge—carrots and Brussels sprouts!​

  • -basmati rice 140 (g)
  • -carrots 2
  • -Brussels sprouts 10
  • -fresh ginger 2 (tbsp)
  • -smoked tofu 200 (g)
  • -soy sauce or tamari 2 (tbsp)
  • -sweet soy sauce 3 (tbsp)
  • -toasted sesame oil 1 (tbsp)
  • -water 500 (mL)

  • Peel the carrots. Slice them into thin rounds. Cut the Brussels sprouts into quarters. Peel and finely chop the ginger.
  • In a pot, pour in the rice. Add the vegetables on top. Place the slices of smoked tofu and sprinkle the chopped ginger.
  • On top, without mixing, pour the sesame oil, soy sauce, and sweet soy sauce. Then finish with the water.
  • Place a lid on the pot and cook over medium heat for 20 minutes. After cooking, it’s ready—the dish is perfectly cooked and seasoned!
