It's super creamy and comforting, I loved it! Chowder is a slow-cooked dish similar to a meal soup but with less liquid! Usually, it's based on potatoes like here, but with fish and seafood. So here's my vegan version with tender leeks 😍😍 I served it with artisanal vegan bacon from @eatcliche 🥹 I don't think the product is out yet, but I managed to snag some extra at the last pop-up at @beaglebagel_mtl
Wash the leek and slice it thinly. Peel the potatoes. Cut them into small cubes.
In a large pot, heat the olive oil. Sauté the leeks until they soften. Add the potatoes and let them brown for 10 minutes over high heat, stirring occasionally.
Deglaze with white wine (optional) and vegetable broth. Add the peas. Let it cook for 40 minutes until the potatoes are super tender and the liquid reduces.
Pour the cream and adjust the seasoning with salt and pepper. It’s ready!
