The other day, I went to a vegan family meal, and at one point, we talked about making a paella, which gave me this idea! In the end, we had an amazing Reunionese curry that day, but I thought, still, a good paella recipe would be a great idea! It’s a one-pan dish, so there’s not much washing up. It’s a fun, simple dish that pretty much everyone enjoys.
While reading about the origins of paella before creating this recipe, I realized that traditional paella was much less packed with meat and seafood than what we see today. This way of preparing it with a gazillion meats on top is actually quite recent 🥲. In the past, other ingredients were used, like marinated artichoke hearts. I decided to add spicy vegan sausages to complete the dish!
