You know, sometimes we just love simplicity. So, a plain coconut cake is really quite delicious as a snack, for breakfast, during that late-night craving at 10 PM... or even that 10 AM hunger pang... basically, anytime you want, you know? 😉 And the best part is, it's super quick to make, seriously. You might even already have all the ingredients in your cupboards!

Of course, we're playing it safe, but you can always add chocolate chips too! #friendlyadvice #fullylove

  • -banana 1
  • -applesauce 100 (mL)
  • -soy cream 100 (mL)
  • -neutral oil 60 (mL)
  • -apple cider vinegar 1 (tbsp)
  • -all-purpose flour 175 (g)
  • -sugar 100 (g)
  • -grated coconut 60 (g)
  • -baking powder 1 (tsp)
  • -baking soda 0.5 (tsp)
  • -salt 1 (pinch)

  • Preheat the oven to 350°F.
  • Mash the banana with a fork to make a puree. Add the applesauce, soy cream, oil, and vinegar. Whisk together.
  • Add the flour, sugar, yeast, coconut, baking soda, and salt, and mix with a whisk (or a rubber spatula if it becomes too difficult).
  • Pour into a greased pan and bake for 40 to 45 minutes. You can check if it's done by inserting a knife blade in the center; it should come out clean (we're sure you already knew this tip but... sometimes people ask, so there you go... 😉).
  • You can keep it in the fridge or on your countertop, covered with a clean cloth, for 3 days.
