You know that we eat waffles 638293 times a week on average, a lot of regular waffles, but now also a lot of Liege waffles! This is officially the recipe that required the most testing before I achieved the result I wanted, so let me tell you, we've been secretly stuffing ourselves with it for weeks 😅
The difference with a regular waffle is that a Liege waffle is a leavened dough, like a brioche. And it's filled with candied sugar and pearl sugar 🥰💕 The reason we use both types of sugar is that candied sugar has a nice molasses flavor, somewhat caramelized, and pearl sugar remains crunchy when cooked!
For the dough, it wasn't what required the most testing, I started from my vegan brioche technique to adapt it. My problem was the cooking, I wanted waffles that were too big and they never cooked on the inside before the sugar burned on the top. So you really need to follow the weight and cooking instructions!
